Quinoa and Breakfast Sausage

I use my pressure cooker to make this a speedy meal, but I am sure you can use any pot that you would normally cook quinoa in.


1 lb of ground pork or turkey breakfast sausage
1 can of cream of chicken soup
1 cup of water
1 cup of quinoa
1 chopped onion

In the pot brown the meat and onions together.  Once browned, add 1 can of cream of chicken soup and a cup of water. Mix well and then add the cup of quinoa.  Mix again and put the lid on.  In the pressure cooker heat to low pressure for 2 minutes then let it naturally release pressure for 10 minutes.  Mix again and serve hot.

I love this recipe because it is quick and easy and pretty healthy.  You can garnish it with sour cream or cheese.
