
1 cup of Quinoa
1 12 oz can of mexican style stewed tomatoes
1/2 cup of water
1 tbs of butter or oil of your choice.
Combine all of the ingredients, mix well, bring to low pressure and cook for two minutes. Let natural pressure release for 10 minutes.
You can garnish this with sour cream, cilantro and a squeeze of lime. Delish!
****UPDATE*****
I have experimented so much with this recipe and could just go on all day but here are some variations of this recipe that I have found delicious:
- Add a can of corn.
- Add black olives.
- Pour black beans over this recipe in a bowl.
- Add cumin and garlic to the mix for quinoa tacos.
- Add potatoe chips.
- Add cheese and refried beans and use as a dip.
- Add cheese.
- Use Italian style stewed tomatoes for a twist.
- Fry eggs to place on top. (husband's favorite)
- Add any fresh herb that you like.
