Easy Quinoa and Italian Stewed tomatoes - Pressure Cooker - Fast and Yummy!

Quinoa and Italian Stewed Tomatoes

2 tbs Sunflower oil,
1 Large Yellow Onion,
1 tsp of Dried Basil,
1 or 2 cloves of Garlic chopped small
1/2 tsp of Salt,
Pepper to taste,
1 Can of black olives
1 Cup of Quinoa
1 Can of Italian Stewed Tomatoes
1/2 cup of water
1 tsp of Sunflower oil (Butter or olive oil work as well)

You can simplify this meal by just adding the ingredients in bold.

Begin by adding the oil and onions.  Cook the onions for a minute before adding the garlic, basil, salt and pepper.  Sautee the combined ingredients until the onions are a light brown or the consistency that you like.


Once your onions are browned you can add the cup of quinoa, the stewed tomatoes, the can of olives and the 1/2 cup of water.  Mix it up really good and add the sunflower oil last.

Put the lid on your pressure cooker and when it gets up to pressure set your timer for 2 minutes and turn the heat on the stove down to medium.  After 2 Minutes remove the pressure cooker from heat and allow it to set for 10 minutes and make sure all of the pressure has released from your pot.






Once the pressure has been released, open up your pressure cooker and mix gently. Scoop out into bowls or plates and garnish with Mozzarella cheese and parsley.  Yummmy.

Sour Cream
Spaghetti Sauce
Meatballs

I love Quinoa.

It is so yummy, versatile and nutritious.  You can use the quinoa recipe from this post Quinoa and Stewed Tomatoes or google it to find your perfect way of cooking this delicious food.  Then........ Stuff your peppers, mushrooms, pastas, lettuce, cabbage and anything else that you would routinely stuff with rice and/or meat.  Yummmmmmmy!
