I like my green peppers a little bit crunchy..... so I don't cook them as long as someone else might. I like to bake them then cut it into fours and turn the pepper into a bean scooper. Yummmmmmy!
Turn on your broiler and let the oven heat up.
Ingredients per Pepper:
2 - 1/4 cup servings hot Cuban Black beans from Trader Joe's drained
(or you can sautee some onions and peppers and mix it into plain black beans)
1 Bell Pepper with the top cut off
4 Tablespoons of shaved Parmesan
I use my bread pan because it is small and has high walls. Put one tablespoon of cheese on the bottom of the pepper and shake it around. Then fill with half of the bean mixture and one more layer of parmesan. Repeat once and put two tbs of the Parmesan on top of the pepper.
Place the pepper into the oven about halfway in the oven. Keep the oven closed for 2 minutes then slightly open it for another 6 minutes.
